This knockoff Eggslu*t Sandwich is so incredibly delicious! Inspired by their iconic Fairfax breakfast sandwich, it's loaded with cheesy soft scrambled scallion eggs, sriracha mayo, crispy bacon and a buttery toasted brioche bun. It's the perfect sandwich for hangovers, brunches, or mornings when you need a little something extra to start your day.

There's a reason there's a line around the block anytime you walk by an Eggslu*t restaurant.

It's because their egg sandwiches are... well.... they're freakin' amazing! SO GOOD OMG!

And because we can't travel anymore, this recipe is inspired by their Fairfax breakfast sandwich.

It's loaded with cheesy soft scrambled eggs that are studded with tiny bits of scallions.

On top of that, you'll find some crispy bacon for some crunch.

To hold it all together, there's some homemade spicy mayo. It's ridic and this recipe makes more than necessary because I know you're going to want it.

And lastly, the whole thing is stacked high on a buttery toasted brioche bun.

It's big, messy, and filling. This knockoff Eggslu*t sandwich is insanely good, you might cry.

That's ok though. You can wipe your tears with your napkins because trust me, you'll need some!

And with New Years right around the corner, I figured now would be the perfect time to share a breakfast sandwich that's perfect for hangovers.

Ingredients

for the mayo

  • ½ cup Mayo
  • 2 teaspoon sriracha
  • 1 teaspoon smoked paprika

for the sandwich

  • salted butter
  • eggs
  • franks hot sauce
  • kosher salt
  • scallions
  • cheddar cheese (I actually prefer american cheese which is pictured!)
  • crispy bacon
  • brioche buns

How to make it

Making this Eggslu*t breakfast sandwich at home is shockingly easy.

To begin, start by frying up your bacon.

While it's getting crispy, go ahead and mix up the spicy mayo.

In a small bowl, combine mayo with sriracha and smoked paprika.

If you don't have any smoked paprika, that's ok -- you can skip it! It's optional but it adds the perfect smoky depth that makes the sandwich even more delicious!

Once the mayo is ready, stick it in the fridge for the flavors to combine.

Next, it's time to prep the eggs.

Break the eggs into a bowl and hit it with a little bit of Frank's hot sauce and a hefty sprinkle of salt.

The bacon is probably just about time, so it's time to remove it from the pan and set on a paper towel to absorb some of the grease.

Wipe the pan out and melt half of the butter and turn the heat to medium-medium low.

Grab a spatula and continuously stir the eggs.

Once the tiny curds appear, add two slices of cheese and the scallions. Continue scrambling until the mixture is light, fluffy and perfectly soft. Separate the eggs into two piles and rest another piece of cheese on each one. Set aside.

Wipe the pan out again and add the remaining butter.

Once the butter has melted, add the brioche buns and toast each one until golden brown.

Remove the buns and assemble the egg slu*t sandwich.

Smear 1 tablespoon of spicy mayo on the bottom bun then top with half of the cheesy scrambled eggs and half of the bacon.

Smear another tablespoon or so of the spicy mayo onto the top half of the bun and close the sandwich up.

Repeat the same process for the other half of the sandwich.

Serve immediately and enjoy!

Other variations

It's super easy to switch things up and make this Eggslu*t sandwich your own.

Instead of bacon, you could definitely try using some sausage, ham or even a slice of tomato.

If you don't like american or cheddar cheese, you could try goat cheese, gouda, or a spicy pepperjack.

And if you can't find brioche, feel free to swap it out for some toasted white bread, a croissant, or even a toasted bagel.

However you want to spin it, go for it!

What to pair it with

If I was making this breakfast and I was hungover, I would definitely serve it with a mimosa or a hot sauce michelada for some hair fo the dog style help. Or maybe you want to be a little healthier and treat yourself to my favorite kale juice? Up to you!

But if you're doing a big breakfast or brunch spread, you can try some easy puff pastry cinnamon buns or some salted caramel churro french toast.

Ingredients

  • ½ cup mayo
  • 2 teaspoon sriracha
  • 1 teaspoon smoked paprika optional but i recommend!
  • 2 tablespoon salted butter divided
  • 5 large eggs
  • 1 teaspoon franks hot sauce
  • 1 tablespoon scallions finely diced
  • 4 slices cheddar cheese I actually prefer american cheese which is pictured!
  • 4 pieces bacon cooked
  • 2 brioche buns
  • kosher salt

Instructions

  • Mix mayo, sriracha and smoked paprika together in a small bowl and set aside.

  • In another bowl, thoroughly whisk together eggs, franks hot sauce, and a pinch of salt. Set aside.

  • In a nonstick pan over medium low heat, melt 1 tablespoon of butter and pour in the eggs.

  • Slowly stir the eggs until curds begin to form. Then add two pieces of cheese and the scallions and keep stirring. The eggs are done when they're slightly set and firm yet wet, glossy, and fluffy looking.

  • Separate the cooked eggs into two piles and top each one with a slice of American cheese.

  • Wipe out the pan and add the remaining butter, toast the insides of the brioche buns until they’re golden brown.

  • Assemble sandwiches. Smear 1 tablespoon of mayo onto each of the bottom of the buns, then top evenly with the cheesy scrambled eggs and the bacon. Smear more mayo onto the top half of the bun and then close the sandwich up. Serve immediately and enjoy!
