Ingredients

Tex-Mex Seasoning

  • 1 tbsp 1 tbsp chili powder
  • 2 tsp 2 tsp paprika powder
  • 2 tsp 2 tsp ground cumin
  • 1 tsp 1 tsp garlic powder
  • 1 tsp 1 tsp onion powder
  • ¼ tsp ¼ tsp ground black pepper
  • 1 tsp 1 tsp salt

Chicken mixture

  • 1¼ lbs 550 g cooked chicken breast, shredded
  • 7 oz. (45 cup) 200 g (210 ml) cream cheese
  • 13 cup 80 ml mayonnaise
  • 1 (4 oz.) 1 (120 g) red bell pepper, dicedred bell peppers, diced
  • ½ (2 oz.) ½ (55 g) yellow onion, dicedyellow onions, diced
  • 2 cups (8 oz.) 475 ml (230 g) Pepper Jack cheese, shredded
  • salt and pepper

Serving

  • 5 oz. (4 cups) 140 g (900 ml) lettuce
  • 2 tbsp 2 tbsp olive oil

Making low carb simple

Instructions

Instructions are for 4 servings. Please modify as needed.

  1. Preheat your oven to 400°F (200°C).

  2. Combine the Tex-Mex seasoning ingredients in a small bowl

  3. Combine the chicken, cream cheese, mayonnaise, bell pepper, onion, Tex-Mex seasoning, and 2/3 of the shredded cheese in a greased baking dish.

  4. Add the remaining 1/3 cheese on top. Bake for 15-20 minutes or until golden brown.

  5. Serve with leafy greens dressed in olive oil.

    I found this really dry, so much so I checked back to see if I had missed an ingredient or something, but no, I followed the recipe correctly. It was ok, but I probably wouldn't bother again, there are nicer recipes here on this site!

    Down the road, there is a little Mexican restaurant that sells chicken enchiladas. We all go there for those, they are delicious. We spend a fortune to get them and this.......this right here...is better. God bless whoever put this up.

    My husband is not keto and he said this recipe is a keeper! He had his on a tortilla and I ate mine with a side salad and it was amazing!

    I made the recipe exactly as described but instead of mixing the spices, I used Taco seasoning and I found it very tasty. Give it a try!

    I poached my chicken and shredded in the mixer. Then I added all other ingredients and slow mixed it together. I'd definitely sauté the peppers and onions next time. They don't cook long enough in the oven. I lowered my oven to 350. I notice many recipes say 400. That's very hot. Was good. Added avocado and some sour cream topping.

    I just did this in the slow cooker and it’s amazing. For 6 serves I used 1kg (2.2 lbs) raw chicken, and added an extra 100ml of thickened (heavy) cream but just chucked it all in the slow cooker and gave it a mix. Cooked on high for 4 hours. Shredded the chicken, then into the oven with the last 1/3 of cheese for 20minutes. Super easy, delicious and not at all dry!!
