Islim Kebab (Islim Kebabi)

Turkish Food & Recipes (1)2 lb eggplant, washed (preferably thin ones)
2-3 banana peppers/1 green bell pepper, cut in bite sizes
3-4 medium tomatoes, sliced round
2/3 cup canola oil for frying
Tooth picks

For the Meatloaf:
1 lb ground beef
1 egg
1 onion, chopped finely
2-3 cloves of garlic, minced/grated
1 tsp salt to taste
½ tsp black pepper

For the sauce:
1 cup crushed/grated tomatoes
1 tbsp oil
A pinch of salt and sugar to taste
1/3 cup hot water

Wash and peel the eggplants in strip shapes or totally. Slice them lengthwise 1/3 inch thick. Then soak them in water or salt and leave them with salt for about 15 minutes.
In a frying pan, fry both sides of eggplant slices lightly. Leave aside. In a bowl, combine all of the meatloaf ingredients and knead with your hands till the mixture gets thick. Then, grab plum size pieces and round them in your palms.
Preheat the oven to 400 F (200 C). Place the meatloaves in a Pyrex Dish and bake for 15-18 minutes till they are cooked. Take out and let them cool.
In a small bowl, place two eggplant slices perpendicular to each other like a cross. Then, place the meatloaf in the middle and wrap it with the eggplant slices. Grab it and place upside down over a tray or Pyrex. First put tomato and then pepper on top and insert a toothpick. Bake for 15-20 minutes in the 400 F (200 C) oven.
Meanwhile, place oil and crushed tomatoes in a small pan and sauté for 3-4 minutes over medium heat. Stir in salt, sugar and water. Cook over low heat till the sauce thickens (about 5 minutes).
Spoon the sauce over a serving plate and place Islim Kebab over. Serve warm.

Kofte icin:
½ kg kiyma
1 yumurta
1 sogan, kucuk dogranmis
2-3 dis sarimsak, ezilmis/rendelenmis
1 tatli kasigi tuz
1 cay kasigi karabiber

Sos icin:
1 su bardagi ezilmis/rendelenmis domates
1 yemek kasigi siviyag
Bir tutam tuz ve seker
1/3 su bardagi sicak su

Patlicanlari yikayin ve isterseniz tam olarak soyun ya da yollu olarak soyun. Uzunlamasina 1 cm kalinliginda dilimleyin. Sonra, su icinde ya da tuzlayarak tuzlu olarak 15 dakika boyunca bekletin.
Bir kizartma tavasinda patlicanlarin her iki tarafini da hafifce kizartin. Bir kenara ayirin. Genis bir kasede butun koftelik malzemeleri karistirin ve elinizle yogurarak kivamli bir karisim elde edin. Erik buyuklugunde parcalar alin ve avuc icinizde yuvarlayarak yuvarlak kofteler yapin.
Firini onceden 200 C (400 F)’ye isitin. Kofteleri firin tepsisine ya da borcam tepsiye dizin ve pisene dek yaklasik 15-18 dakika kadar pisirin. Firindan cikarin ve sogumasini bekleyin.
Kucuk bir kaseye iki tane patlican dilimini capraz gelecek bicimde ust uste koyun ve bir arti isareti elde edin. Ortasina bir tane kofte yerlestirin ve patlicanlari uzerien kapatarak sikica sarin. Elinizle alin ve ters cevirerek firin tepsisine yerlestirin. Uzerine once bir dilim domates ve sonar bir parca biber koyun. Uzerine kurdan batirarak sabitleyin. 200 C (400 F) firinda yaklasik 15-20 dakika pisirin.
Bu sirada, bir tavada sosu hazirlamak uzere sivi yag ve domatesi 3-4 dakika boyunca orta ateste pisirin. Tuz, seker ve suyu ilave edin. Kisik ateste sos biraz koyusana dek pisirin (yaklasik 5 dakika).
Bir iki kasik sosu servis tabagina alin ve uzerine Islim Kebabi’ni yerlestirin. Sicak servis yapin.

Turkish Butcher's Meatballs (Kasap Kofte)

2 lb ground beef

1 tsp salt to taste

1 onion, grated

2-3 cloves of garlic, smashed

½ cup fresh parsley, finely chopped

½ tsp thyme

½ tsp cumin

½ tsp black pepper

½ tsp crushed red pepper

Combine all the ingredients in a mixing bowl. Knead untilthe ground beef absorbs the ingredients.

Grab egg size or bigger pieces and make balls rolling themin between your palms. Then, flatten the meat balls as seen in thepicture.

Cook both sides over the grill until they get browned. Servewith salad and/or greens.

Baked Meat Balls (Firin Kofte)

1 lb ground beef

1 onion, grated

1 tsp cumin

1 tsp sea salt to taste

½ tsp fresh ground pepper

½ tsp crushed red pepper

4 Tbsp olive oil

Mix all the ingredients, but the olive oil. Then, knead for acouple of minutes for an even distribution of the ingredients. Grab egg size orbigger pieces and make circular patties. Place them over an oven tray greasedwith olive oil. Brush the tops of the meat balls with olive oil.

Bake them in a preheated 400F (200C) for about 25-30minutes or until they get lightly brown.

Super Bowl Recipe - Turkish Burger (Turk Burgeri)

Pita bread/hamburger buns

Lettuce leaves

Tomato, sliced

Onion rings

For the burger:

1 lb lean ground beef

1 small onion, diced finely/processed

¼ tsp black pepper

¼ tsp chili pepper

¼ tsp cumin

1 egg

½ cup bread crumbs (optional)

1 tsp salt to taste

2 Tbsp canola oil for frying

Take all the burger ingredients in a bowl and mix them all using your hands. Knead as you do dough for a few minutes and give it a ball shape. Then, cover and keep in the fridge at least 2-3 hours. Grab egg size or bigger pieces of ground beef mixture and give it a flat round burger shape using your palms. Do the same with the remaining mixture.

Heat up the canola oil in a skillet and fry both sides of Turkish burgers.

Immediately fill the Turkish burgers inside the breads and the other ingredients as well. Serve warm.

Kofte icin:

½ kg yagsiz kiyma

1 kucuk sogan, kucuk dogranmis/rendelenmis

½ cay kasigi kimyon

½ su bardagi ufalanmis ekmek (istege bagli)

1 tatli kasigi tuz

½ cay kasigi pul biber

2 yemek kasigi kanola yagi, pisirmek icin

Koftelik malzemeleri karistirin ve elinizle hamur yogurur gibi yogurun ve yuvarlak bir top yaparak birakin. Buzdolabinda agzi kapali olarak en az 2-3 saat dinlendirin. Sonra, yumurta ya da daha buyuk parcalar koparin ve yuvarlak kofte seklini verin. Geri kalan kiymadan da ayni sekilde kofte yapin.

Kanola yagini kizartma tavasina alin ve kizdiktan sonra kofteleri her iki tarafi da kizarana dek pisirin. Bekletmeden, ekmek arasina kofteyi ve diger malzemeleri resimdeki gibi doldurun. Sicak servis yapin.

Tomato Soup with Meatballs (Kofteli Domates Corbasi)

1 cup tomatoes, crushed

2 Tbsp tomato paste

3 Tbsp canola oil

3 Tbsp flour

6 cups (1 ½ L) water

For the meatballs:

½ lb ground beef

¼ tsp black pepper

½ small onion, finely chopped

½ tsp salt to taste

Take meatball ingredients in a bowl and mix them all using your hands. Make hazelnut size or walnut size meatballs. Keep them in the refrigerator for about 15-30 minutes.

Meanwhile, take canola oil in a pot and stir in flour. Over medium heat sauté for about 3 minutes or until the flour turns yellow. Stir in tomato paste and tomatoes. Cook for about 3-4 minutes stirring occasionally.

Add 6 cups of water and bring to a boil. Add the meatballs and cook over low-medium heat until the meatballs are cooked (for about 15-20 minutes). Sprinkle with pepper.

Serve hot/warm.

Kofteler icin:

250 gr kiyma

½ cay kasigi karabiber

½ kucuk sogan, ince dogranmis

1 cay kasigi tuz

Kofte malzemelerini bi kapta iyice karistirin. Elinizle yogurabilirsiniz. Cevizden biraz daha kucuk ya da findik buyuklugunde yuvarlak kofteler yapin. Buzdolabinda yaklasik 15-30 dakika dinlendirin.

Bu sirada, tencereye kanola yagini alin. Orta ateste unu 3 dakika kadar sararana dek kavurun. Salca ve domatesleri ilave edin. Yine 3-4 dakika kadar cevirin.

Alti su bardagi suyu ilave edin ve kaynamasini bekleyin. Kaynamaya baslayinca, kofteleri icine atin ve kisik ateste kofteler pisene dek pisirin (yaklasik 15-20 dakika). Karabiber serpin.

Sicak servis yapin.

Sweet Peas with Meatballs (Kofteli Bezelye)

2 tomatoes, diced
1 tsp tomato paste
1 big carrot, sliced round
1 big potato, cut in cubes
1 Tbsp salt to taste
½ cup hot water

For the meatballs:
½ lb ground beef
1 egg
1/3 cup bread crumbs
1 small onion, finely chopped
½ tsp salt to taste
½ tsp black pepper

Mix the meatball ingredients in a bowl. Grab pieces smaller than walnut and make little meatballs using your palms. Cover and keep them in fridge prior to use.
Meanwhile, take potatoes, sweet peas and carrots in a Pyrex dish. Sprinkle with salt and mix. Dissolve tomato paste in hot water. Take the meatballs out of the fridge and place over the vegetables. Pour the hot water with tomato paste over and add the tomatoes evenly as well.
Bake in preheated 400 F (200 C) oven for about 30-40 minutes or until meatballs and potatoes are cooked.
Serve warm.

Koftelik malzemeleri bir kapta karistirin. Cevizden biraz daha kucuk parcalar koparin ve yuvarlak kofteler yapin. Uzerlerini ortun ve buzdolabina kaldirin.
Diger yandan bezelye, dogranmis patates ve havuclari bir borcam tepsiye alin. Tuzlayarak harmanlayin.
Salcayi ½ su bardagi sicak suyun icinde cozundurun. Kofteleri buzdolabindan cikarip sebzelerin uzerine yerlestirin. Salcali suyu ve domatesleri esit olarak tepsinin uzerinde gezdirin.
Onceden isitilmis 200 C (400 F) firinda yaklasik 30-40 dakika kadar kofteler ve patatesler pisene dek pisirin.
Sicak servis yapin.

Baked Meatballs and Potatoes (Izmir Kofte)

Turkish Food & Recipes (21)1 lb ground beef
4 potatoes
2 cups tomato, petite diced
1 tsp tomato paste
½ cup + 1-2 tbsp canola oil
½ tsp sugar
½ cup bread crumbs
2 tbsp parsley, finely chopped
1 onion, finely chopped
½ cup hot water
1+1 tsp salt to taste
½ tsp black pepper

Mix ground meat, onion, 1 tsp salt, black pepper, bread crumbs and parsley in a bowl (feel free to use your hands for better mixing). Grab egg size pieces and make finger shaped meatballs. If have time, leave the meatballs in the fridge for about 1-2 hours.
Meanwhile, peel the potatoes and cut them like apple slices. Fry them lightly in ½ cup of canola oil and place over a round oven tray. Sprinkle 1 tsp salt over. Leave the middle of the tray for the meatballs.
In a saucepan, place canola oil, tomatoes and tomato paste. Saute for a couple of minutes then, add hot water. Cook for about 5-6 minutes. Stir in the remaining salt and sugar.
Preheat the oven to 400 F (200 C). Place the meatballs in the middle of the tray and pour the tomato sauce all over the tray. Bake till potatoes and meatballs are cooked (for about 30-45 minutes).

Kiyma, sogan, 1 tatli kasigi tuz, karabiber, ekmek ici ve maydanozu bir kapta guzelce karistirarak yogurun. Yumurta buyuklugunde alin ve parmak seklinde kofteler yapin. Zamaniniz varsa kofteleri buzdolabinda 1-2 saat dinlendirin.
Diger yandan patatesleri soyun ve elma dilimi seklinde dilimleyin. Yarim su bardagi kanola yaginda hafifce kizartin. Yuvarlak bir firin tepsisinin kenarlarina uzunlamasina patates dilimlerini dizin ve uzerlerine 1 tatli kasigi tuzun yarisini serpistirin.
Diger yandan 1-2 yemek kasigi kanola yagina domates, domates salcasi ve sicak suyu ilave edin. Yaklasik 5-6 dakika kadar pisirin. Geri kalan tuzu ve sekeri ilave edin.
Kofteleri tepsinin ortasinda kalan bosluga yerlestirin. Domates sosunu tepsinin uzerinde gezdirin. Onceden isitilmis 200 C (400 F) firinda kofteler ve patatesler pisene dek pisirin (yaklasik 30-45 dakika).

Grilled Turkish Meat Balls (Izgara Kofte)

1 big onion, grated or minced
1 tsp black pepper
1 tsp baking soda
½ tsp cumin (optional)
1 egg
1 tbsp salt to taste

Mix all the ingredients in a large bowl. Knead with your hands for about 5-10 minutes. Leave it in the fridge at least for 2-3 hours.
Grab egg size pieces and make round shaped thin meat balls. Repeat this until you use all the mixture. Then cook them over a barbecue or electric grill, till both sides get lightly brown.
Serve them while still hot.

Kiyma karisimindan yumurta buyuklugunde parcalar alin, yuvarlak ve ince kofte sekli verin. Butun kiymadan kofte yapin. Sonra tercihen mangal ya da izgarada her iki taraflari da kizarana dek pisirin.
Sogutmadan sicak sicak yiyin.

Lady's Thigh Kofte (Kadinbudu Kofte)

1big onion, chopped
½-1 bunch of fresh parsley, chopped
½ cup rice, washed and drained
1 cup hot water
1 tsp+ ½ tsp salt to taste
½ tsp cumin
½ tsp black pepper


For Frying:
½ cup canola oil
2 eggs, beaten
¾ cup flour

Boil rice in a cup of hot water and add ½ tsp salt. Leave it to cool.
Cook 2/3 of ground beef in skillet till its color turns to brown over medium heat. Then, stir in onion and the remaining salt. Cook till onions get soft over low heat (3-4 minutes). Finally, stir in the parsley and the spices and turn the heat off.
In a large bowl mix the cooked ground meat mixture, rice and the remaining raw ground beef. You can knead with your hands if you like.
Cover the mixture and leave in the fridge for about 30 minutes.
Take egg size pieces and make egg shapes and flatten with your hands (the shape in the picture). In a frying pan, sizzle oil. Place flour in a wide plate. In another plate beat the eggs. First dip the koftes in flour, make sure the koftes to be covered evenly with flour. Then dip into egg and fry both sides until they get lightly golden brown.
For a thicker coating; after dipping into egg, again dip into the flour and then fry.
This recipe makes about 10-14 Lady’s Thigh Kofte.

¾ su bardagi un

Bir bardak sicak suda pirinci pisirin. Bir cay kasigi tuz ilave edin. Sogumaya birakin.
Kiymanin 2/3 unu bir tavada rengi kahverengiye donene dek orta ateste pisirin. Sonra sogan ve geri kalan tuzu ilave edin. Soganlar pisene dek 3-4 dakika kisik ateste pisirin. Son olarak maydanoz ve baharatlari ilave edip atesten alin. Onceden ayirdiginiz cig kiymayi ve pirinci de ilave edip hepsini buyuk bir kasede karistirin. Isterseniz elinizle yogurabilirsiniz.
Kofte karisiminin uzerini kapatin ve buzdolabinda sogumasi icin 30 dakika kadar bekletin.
Kiyma harcindan yumurta buyuklugunde ve seklinde kofteler yapin ve elinizle bastirarak duzlestirin.
Kizartma tavasinda sivi yagini kizdirin. Genis bir tabaga unu koyun. Ayri bir tabakta yumurtalari cirpin. Kofteleri once una bulayin, sonra yumurtaya batirip her iki tarafini da guzelce kizartin. Koftenin disinin daha kalin olmasini istiyorsaniz yumurtaya batirdiktan sonra tekrar una bulayip kizartabilirsiniz.
Bu tariften yaklasik 10-14 Kadinbudu Kofte cikiyor.

Inegol’s Traditional Meatball (Inegol Kofte)

¼ cup bread crumbs
1 big onion, shredded
½ tsp cumin
¼ tsp black pepper
1 tsp baking soda
1 clove garlic, minced (optional)
2-3 stems parsley, finely chopped (optional)
1 tsp salt

Mix all the ingredients in a bowl. And knead for 3-4 minutes to form a stiff mixture. Cover it and leave in the fridge for the night. Then, the next day make finger shape meatballs.

Shallow fry them in a skillet or grill. Make sure that all sides turn to a golden brown color.
You can serve Inegol’s Traditional Meatball with; pilaf, roasted peppers, French fries, kidney bean salad, tomato salad or onion salad and ayran.
